Why He Called It “Nature’s Perfect Breakfast”

Every morning, before the sun had fully risen over the orchard, my grandfather placed two eggs into a small pot of gently boiling water.

He never rushed them.

Exactly nine minutes later, he cooled them under cold water, peeled them carefully, sprinkled a little sea salt and black pepper on top, and enjoyed them beside fresh tomatoes, spinach, and whole-grain bread.

“The best breakfasts,” he often said,

“don’t come from a factory.”

One chapter in his old notebook carried a title that always caught my attention.

“The Small Oval That Builds Great Strength.”

As a child, I thought an egg was simply breakfast.

Years later, I discovered it was one of the most nutritionally complete foods found in nature.

A single large egg contains about 6 grams of high-quality protein, providing all nine essential amino acids the body cannot produce on its own. These amino acids become the building blocks for muscles, skin, enzymes, hormones, antibodies, and countless other tissues that are constantly being repaired throughout life.

Grandpa never talked about amino acids.

He simply wrote,

“Strong houses begin with good bricks.”

The page that fascinated me most focused on one nutrient many people have never heard of.

Choline.

Eggs are one of the richest natural dietary sources of this remarkable compound.

Inside the body, choline helps build cell membranes, supports liver function, and serves as a precursor for acetylcholine, a neurotransmitter essential for memory, learning, muscle contraction, and communication between nerve cells. Older adults often consume less choline than recommended, making eggs a valuable source as part of a balanced diet. (nih.gov)

Grandfather simply smiled.

“Feed the brain,” he wrote.

“It remembers everything you do.”

Another chapter explored the muscles.

Beginning around the age of 30, people naturally lose small amounts of muscle mass each year, a process that accelerates with aging if adequate protein and regular resistance exercise are lacking.

Egg protein is considered one of the highest-quality proteins available because of its excellent digestibility and amino acid profile. Combined with physical activity, adequate protein intake helps support the maintenance of muscle mass as we grow older. (pubmed.ncbi.nlm.nih.gov)

Grandpa believed breakfast was the first opportunity each day to nourish those muscles.

“The body,” he wrote,

“rebuilds itself one meal at a time.”

For years, many people avoided eggs because of their cholesterol content.

Today’s research paints a more complete picture.

For most healthy individuals, moderate egg consumption can fit comfortably within a heart-healthy dietary pattern. Large studies have found that eating eggs in moderation is not associated with a higher risk of cardiovascular disease for most people, especially when the overall diet is rich in vegetables, fruits, whole grains, legumes, nuts, and healthy fats. Individual medical conditions may require personalized advice from a healthcare professional. (heart.org)

Grandpa never feared the egg.

He feared skipping breakfast.

Near the final page of his notebook, Grandpa had written words that remained folded between two pressed olive leaves for decades.

“People ask whether one food creates perfect health.”

“I tell them no single food ever could.”

“But a nourishing breakfast…”

“A daily walk…”

“Strong muscles…”

“Colorful vegetables…”

“Restful sleep…”

“And grateful mornings…”

“Have a remarkable way of shaping the years ahead.”

“The egg was never the miracle.”

*”It was simply one small piece of a life lived well.”
